Chocolate Protein Nut Brittle

Get creative with the chocolate topping – why not try drizzling one of your favourite caramel toppings onto it?
PREP TIME 10 minutes SERVES 16 COOK TIME 2 hours DIFFICULTY Easy
2 cups mixed roasted nuts
200g sugar-free milk chocolate
1/4 cup protein powder of choice (you can omit if you wish)
1 tsp olive oil
2 tbsp Organic Road Almond and Chia Seed Butter
Roughly crush nuts by pulsing briefly in food processor or with a knife on a chopping board.
spread nuts onto a baking tray lined with a reusable mat. Set aside.
Melt chocolate gently on a low heat in a microwave or double boiler method. Pour chocolate over nuts to completely cover. Drizzle with nut butter.
Place in fridge 2 hours or freezer for 20 minutes. Break into pieces and enjoy! Store in an airtight container in the fridge.
