Lemon and Almond Bliss Balls

PREP TIME 5 mins SERVES Makes approx 20 balls

COOK TIME 10 mins DIFFICULTY Easy

 

INGREDIENTS


  • 2 cups raw almonds

  • 20 large medjool dates, pitted

  • 1 tsp vanilla powder

  • Zest of 1 lemon

  • 1/2 cup shredded coconut


METHOD

1. Place almonds, dates, vanilla powder and lemon zest into a food processor and blitz for 3 minutes or until mixture clumps together like a big ball of dough. 2. Transfer mixture to a large bowl. Scoop up a small amount of mixture and, using your hands, roll into a small ball. Roll ball in shredded coconut, then place on a serving plate. Repeat with remaining mixture; you should be able to make about 20 bliss balls. Serve lemon and almond bliss balls immediately or store in an airtight container in the fridge for up to 2 weeks
