Prawn and smoked salmon creamy pasta salad

250g brown rice penne
300g cooked prawns, deveined
100g smoked salmon, sliced
1 bunch asparagus, trimmed, cut lengthways in 3cm lengths
150g green beans trimmed, sliced in 3cm lengths
1 mango, diced
dill sprigs and watercress to serve
Mix all dressing ingredients. Set aside.
In a large pot, boil 2L water with 1.5 tbsp salt, and cook pasta following to the package directions (6-8 minutes), rinse and drain.
Meanwhile, cook asparagus in boiling water for 1 minute, cook green beans for 2 minutes and drained them, cool under cold water and refrigerate them.
In a large mixing bowl, add pasta and 1/3 of the dressing and mix.
Add prawn, asparagus, green beans, and remaining dressing and toss.
Add mango and smoked salmon, toss gently.
In a large serving bowl, place watercress, pasta salad and sprinkle dill.
